I learned a lot about whisky and the beautiful process of distilling it earlier this month while on assignment for the New York Times at Balcones Distillery in Waco, Texas.

Beautiful! We've been trying different Texas whiskeys, but we haven't tried that one yet. I'll add it to the list.
